Patagonian is the word for people, animals, and things from Patagonia — that huge, peopled southern region of Argentina (and, in fuller talk, Chile), with many sheep farms, few towns, and a lot of wind. As an adjective: a Patagonian ranch, Patagonian wildlife. As a noun, a Patagonian is a person from there. You give it a capital letter, like other words built from place names. Though actually, a lot of meet “Patagonian” first on a label — Patagonian toothfish on a menu, or a Patagonian animal in a zoo — before they meet the place on a map.
