Offal is the inside parts of an animal that people cook and eat — the heart, liver, kidneys, and sometimes the tongue, tripe, or brain. It is not the steak or the chicken breast; it is the organs. In British English this is the normal kitchen word. American English often says organ meat instead. In many places offal is cheap, strong-tasting, and either loved or hated. A night-market stall may sell it as a treat; a fancy restaurant may dress the same thing up with a French name. Older English also used offal for scraps and leftover bits more generally, like waste that falls away, and you may still meet that wider sense in farming or history. In a food class, though, if someone says offal, they mean the insides on the plate. The word is not an insult by itself. Calling a fine piece of muscle meat “offal” would simply be the wrong name.
組成From Middle English offal, equivalent to off- + fall: the bits that fall off when an animal is cut up. Related in origin to words like Dutch afval and German Abfall, which mean waste.
