An oboist is the person who plays the oboe — that thin wooden pipe with a double reed that you blow. The ending -ist just means “someone who does this,” the same way a plays the piano. You will see it on concert programmes and in music news. In everyday talk people often just say “the oboe player.” It is never the name of the instrument itself.
