If something is irrecoverable, it is lost or gone, and you cannot get it back. People use this a lot about money: an irrecoverable debt is money someone owes you that you will never see again. They also use it about computer files, about health, and about trust — once it is broken in that way, it will not come back. It is a rather careful, word. In everyday talk you would more often say you cannot get it back, or it is lost for good. Though actually, people stretch it a little: they sometimes call a loss irrecoverable when they only mean it is very, very hard to get back, not that it is truly impossible.

組成ir- (not) + recoverable (able to be got back). From Middle English irrecoverable, from Middle French irrecovrable. By the pieces you can see, it is ir- + recoverable — and, though actually, this “not-get-back” form is recorded earlier than recoverable itself.
