Something intermittent does not run in a smooth line. It stops, then starts again, then stops, often for short stretches. Rain can be intermittent. A phone signal can be intermittent in the mountains. Pain can be intermittent — it comes and goes. Though actually, people also stretch it: intermittent fasting is a diet of eating, then not eating, on a clock; that fashionable use is still the same on-and-off idea. The word is a bit formal. In chat a student might just say on and off or it keeps stopping.

組成From Latin intermittens, “sending between”: inter- (“between”) + mittens (“sending”), from mittere (“to send”). English took it through Middle French.
