Something interminable feels as if it will never end — and it is boring while it lasts. A meeting, a speech, a wait in a queue, a long car ride: if you call it interminable, you are complaining. It is a bit literary, a bit dramatic; people use it when they want to sound fed up in a grown-up way. It does not mean “cannot be decided” (that is a different family around determine). It means “without an end,” or rather, it feels that way. Though actually, almost nothing is truly endless; we use the word for things that merely go on too long.
