Infinity means something that has no end at all - it just keeps going forever. In math, infinity has its own symbol, ∞, and it isn't really a number you can count to, just an idea of 'more than any number you could ever name.' In everyday talk, people use 'infinity' to say something is endless or extremely large, like 'I could eat this to infinity' meaning 'I could keep eating it forever.'
