Hiking is the activity of going for a long walk in the mountains or the countryside, usually on a path, for the air, the exercise, and the view — not to get somewhere fast. You wear stronger shoes, often carry a small bag, and may be out for hours. In American English this is the ordinary word. In British English people often say walking or for the same hobby, and hiking can sound a little more American, or a little more “a real day on a trail.” Though actually, British people use hiking too, especially for marked mountain paths. It is not a short stroll in the park, and it is not climbing with ropes. In Taiwan, friends who say they are going hiking usually mean a weekend on a mountain trail.

From dialectal English hyke 'to walk vigorously', probably a Northern form of hitch.
