A hawker is someone who carries goods from place to place and tries to sell them — in the street, from door to door, or from a small stall they can move. It is an older English word for a travelling or street seller. In much of Asia, especially Singapore and Malaysia, hawker is still the everyday word for a street-food cook or ; a hawker centre is a big hall of those stalls. In Taiwan we have the same kind of person, but we usually say the Chinese word, not hawker. The meaning here is the seller. There is another hawker, spelled the same, who hunts with a hawk; that is a different word with a different history, and it is not this sense.
組成In this “street seller” meaning, probably borrowed from Low German or Dutch, and it belongs with English huckster, another old word for a small seller. It is not hawk the bird + -er in this sense — that spelling is a different job.
