Haggis is a famous Scottish food. Cooks chop the heart, liver and other organs of a sheep, mix them with oatmeal, onion, and pepper, and boil the mix in a skin that was traditionally the sheep’s stomach. On Burns Night in late January many Scottish people eat it with mashed and potato. Some people love the peppery, rich taste; some do not. You can now buy vegetarian haggis with no animal organs. The name is tied to chopping the filling small.
