    Guacamole is a cold Mexican dish — really a thick dip or spread — made by crushing ripe avocado and mixing it with things like lime, salt, onion, tomato, , and . You eat it with chips, or put it on tacos. It is not cooked. In many countries it has left Mexican restaurants and turned up at parties next to the crisps. People stretch the word a little: a kitchen may call any avocado mash guacamole even when it is plain. The sound is roughly gwa-ka-MOH-lay, from Spanish, not three English bits stuck together.
