Flavoursome means food has a strong, pleasant taste. It lives in the same neighbourhood as flavourful: the dish is not dull; the taste is there, and it is nice. A flavoursome soup has been made with care — ripe tomatoes, real stock, herbs that you can actually notice. It is a British word, and you will see it on menus and in food writing more than in everyday chat. People at the table still often say tasty. It does not mean “having many different flavours,” and it does not mean spicy. One clear, pleasant taste is enough. The pieces are flavour plus -some, “having that quality.” Troublesome is full of trouble; flavoursome is full of flavour — though here the feeling is a compliment. American writing almost never uses this spelling; it prefers flavorful.
