Eos is the goddess of the dawn in Greek myth: the first light, when the day begins and the sun is not fully up yet. She is morning light, not the sun itself. In Roman myth the same kind of goddess is called Aurora.

Though actually, the stories give her a life, not only a job. She rises from the water, she opens the morning, and in some tales she loves mortal men and pays a price for that. Painters and poets use her name as a beautiful way to say dawn. Write it with a capital E; it is a name. The old Greek word ēṓs meant dawn, daybreak, morning, day, or the east. Aurora is not a different job with a different sky — it is the Roman name for the same dawn figure, a doublet, the same older idea arriving by another road.
