If food is eatable, it is in a good enough state to go in your mouth — not rotten, not burnt to nothing, not so badly cooked that you cannot face it. It is eat + -able, “able to be eaten,” and it is a close old partner of edible (they are : two words from the same idea). Though actually, most careful speakers now reach for edible when they mean “safe to eat, not poison,” and keep eatable for “you could get this down if you had to.” A mushroom may be edible (not poisonous) but not very eatable (it tastes awful). In everyday talk people mix the two, and eatable sounds a little older or more than edible. You may also meet eatables as a plural noun meaning food, but the usual sense here is the adjective.
