Deskilling is the name of that change: the removing or reducing of skill from a job, usually by machinery or by breaking the work into tiny, easy pieces. Same idea as the verb deskill, but here it is the process itself — what is happening to the work over time. You will see it in writing about factories, offices, kitchens, and the future of work. Though actually, it can sound cold and technical, which fits: the point is often that a rich craft has been flattened into something a machine, or a newcomer with a script, can do. It still names a change to the job, not a person getting worse at a sport or a hobby.
