A dairyman is a man who works for a dairy. That can mean a man on a dairy farm, or a man at a milk plant. In older British English it could also mean the man who brought milk to the door — though actually many people would now say for that job, and dairy farmer if he owns the cows. Dairyman is a work word, a bit old-fashioned, and it does not tell you whether he is the boss or a hired hand. It is simply “man + dairy work.”

組成dairy + -man. Dairy is the milk trade or the farm; -man marks a person, here a man, who does that work.
