The cortex is the outer layer of an organ in your body. When people say cortex with no extra word, they often mean the outer layer of the brain — the grey surface where a great deal of sensing, moving, and thinking is organised. Though actually other organs have a cortex too: the kidney has one, and so do the adrenal that sit on the kidneys. The name comes from an old word for tree bark, which is a useful picture: bark is the outside of the tree, and the cortex is the outside of the organ. The inside is not the cortex.
