A clubber is a person who goes to nightclubs — to dance, to drink, to stay out late. The word is informal, and it often means someone who does this a lot, not just once. The “club” here is the nightclub, the dark room with music, not a sports club and not a stick. You will hear it of young city life, weekends, and people pouring out onto the street at two in the morning. It names the person. The activity itself is clubbing. (The same spelling can make you think of someone who hits with a club; that is not this sense.)
