A bullock is a young male of cattle that cannot father a calf. Farmers usually have this done on purpose, so the animal grows for meat and stays calmer than a full bull. A bull is the adult male that can still breed; a bullock cannot. In some places people say steer for a similar animal. The word belongs to farm and British English more than to city talk, and you will meet it in farming, meat, and older stories. There is also a rare verb to bullock, meaning to push through in a heavy, bull-like way, but the animal is the sense you will actually see.
