A buildup is a gradual increase of something over time. It can be something physical, like a buildup of pressure in a pipe, or something you feel, like the buildup before a big event — the growing anticipation as it gets closer. In news, you'll also hear about a military 'troop buildup', meaning more soldiers are gradually being gathered in one place.
