An aroma is a strong smell that is pleasant, or at least interesting in a good way. You use it for food, coffee, bread, , flowers, perfume, tea, and wine — things you are meant to enjoy with your nose. It is a slightly nicer, more careful word than smell. Smell can be anything, including bad; aroma almost always leans good. Cooks, cafés, and like it. You would not normally call a rubbish bin's smell an aroma, unless you were joking. There is a faint “rich” or “special” feel: the aroma of roast chicken, not just “it smells of chicken.”
