An anatomist is a scientist who studies anatomy: the map of the body. Their work is to learn how living bodies are put together, often by careful cutting, looking, and drawing. That cutting is in the history of the word, though today much of the study also uses scans and models. Though actually, an anatomist is not the same as a surgeon. A surgeon operates to help a patient who is alive; an anatomist may never treat a patient at all. A surgeon needs knowledge, but the job names are different. In history books, early anatomists are the people who first drew that map for the rest of us.
