Albumen is the colourless part inside an egg — the clear, sticky white that turns white when you cook it. Cooks in textbooks, and scientists, use albumen; most families just say egg white. In biology it can also mean the food store around a young plant inside some seeds. Though actually, there is a close cousin, albumin (with an i), a kind of protein in blood and also in egg white. English speakers mix the two spellings all the time. Albumen feels technical and a little old-fashioned in the kitchen; egg white is the human word.
