Acrobatics are the body movements themselves: jumping through the air, balancing on a rope, twisting, turning — the kind of thing you see in a circus or a gymnastics hall. The word is a noun, and it usually stays plural in shape even when you mean the skill as a whole (like mathematics). People also stretch it: political acrobatics, verbal acrobatics — clever, moves that are not about the body at all, and the tone there is often a little teasing. In its home sense it is everyday performance and sports talk.
