This word names a people, so it is always written with a capital Z, like Japanese or Scot. As a noun it means one person: she is a Zulu, two Zulus. The same spelling does two other jobs nearby — it names their language, and it goes in front of a noun to say something belongs to them, as in Zulu music. In careful modern writing you will more often meet the adjective form, Zulu people, than the plain plural noun, and both are normal.
