Whiteness is simply the quality of being white - how white something is, like judging the whiteness of a shirt after washing it, or comparing the whiteness of paint colors. In more academic or social discussions, 'whiteness' can also refer to the identity and experience of being a white person, and the social advantages that can come with it - this is a more advanced, specialized use you'll mostly meet in sociology or discussions about race.
