"Uzbek" works in three ways. As a noun for a person: an Uzbek is someone of the Uzbek people, the largest ethnic group in Uzbekistan in Central Asia; Uzbeks also live in Afghanistan, , and beyond, so being Uzbek and being a citizen of Uzbekistan are not quite the same thing. As a noun for a language: Uzbek is a Turkic language, a cousin of Turkish and Kazakh, spoken by around 35 million people; it has been written in Arabic script, then under Soviet rule, and now mainly in the Latin alphabet. As an adjective: Uzbek food, Uzbek music, an Uzbek passport. Note the careful difference English makes here — "Uzbek" leans toward the people and the language, while "Uzbekistani" is sometimes used for anyone from the country whatever their ethnic group, though in ordinary speech most people just say Uzbek for both. It is a proper noun, always with a capital U, and the plural is "Uzbeks." The word came into English through Russian in the 1600s, which is why the spelling looks the way it does.
組成English borrowed it from Russian узбек, which took it from Uzbek oʻzbek. Where the name came from before that is not settled; one common suggestion is Turkic öz ("genuine, one's own") plus a Sogdian word beg ("master") — but scholars differ, so treat that as a story people tell rather than a fact.
