Unseen simply means not seen - either something nobody has looked at yet, or something that cannot be seen at all, like an unseen danger or an unseen force. In British schools, an 'unseen' text in an English exam is a piece of writing students have never read before, so they have to understand and analyze it on the spot, without any preparation.
