That is why it needs a difficulty nearby to make sense — 'she sat unruffled at home reading' is odd, because nothing was trying to ruffle her. It is a slightly literary, slightly admiring word — you meet it more in novels and news writing than in daily speech, where people say 'she stayed cool' or 'he didn't panic'. It is also used of water and feathers in their plain sense: 'the unruffled surface of the lake'.
