So clearly good, honest, or correct that nobody can attack it. You will see it with a small set of nouns: unimpeachable honesty, unimpeachable character, unimpeachable sources, unimpeachable evidence, an unimpeachable reputation. There are really two flavours. About people, it means their behaviour gives no one anything to accuse them of. About information, it means the source is so reliable that doubting it would be unreasonable — journalists write "from an unimpeachable source". It is formal and rather grand; you meet it in newspapers, biographies, and courtrooms, not in chat. The word comes from , "to accuse or call into question", which today most people know from the process of accusing a president. So the picture underneath is legal: this is something you could not build a case against, however hard you tried.
