To flinch is to make that tiny backward movement your body does by itself when something or painful comes at you — a needle, a loud bang, a hand raised near your face. Unflinching means not doing that: staying steady when most people would pull back.
It is used two ways, and both matter. Physically, it is about a body that does not move: he stood unflinching as the ball flew past his head. More often, it is about character — unflinching courage, unflinching loyalty, an unflinching commitment to the truth. Here it means you do not back down when the situation gets , dangerous, or costly.
There is a third use that students meet in reviews and articles: an unflinching look at something ugly. An unflinching documentary about poverty, an unflinching account of the war. This means the writer or film-maker does not look away from the hard parts, does not them to make the audience comfortable. This is high praise in criticism.
The word is fairly formal and rather serious. You will read it far more than you say it. In everyday speech people say 'he didn't back down' or 'she looked right at it'.
