    Umami is the fifth taste. For a long time people in the West said there were four — sweet, sour, salty, bitter — and then a Japanese chemist, Kikunae Ikeda, argued in 1908 that there is another one, a deep savoury taste that none of those four describes. That taste is umami.

組成Borrowed whole from Japanese 旨味 (umami), which splits into 旨い (umai, "delicious") plus み (-mi), an ending that turns a describing word into a noun — the same job that "-ness" does in English. So the literal build is "delicious-ness".
