Tikka is a way of cooking small pieces of meat — usually chicken — that comes from India and Pakistan. The meat is cut up, left for hours in yoghurt and so the taste goes right in, then cooked over strong heat, often in a clay oven called a tandoor. The pieces come out dry-ish and a little burnt at the edges, not in sauce.
