Tapioca is a starch taken from the root of the cassava plant, dried into small hard white grains or a fine flour. When you cook it in liquid it swells, turns clear, and goes soft and . In British and American cooking it is best known as a milky pudding — small pearls in sweet milk, a school-dinner dessert that older people remember with strong feelings in both directions. In Taiwan it is the same substance you already know very well: the black pearls in bubble tea are tapioca, boiled with brown sugar. It is uncountable, so you say 'some tapioca' and 'a bowl of tapioca', never 'a tapioca'. 'Tapioca pearls' is the usual name for the balls, and on English menus abroad bubble tea is often written 'tapioca milk tea'.
