A tang is a taste or smell that is strong and sharp in a good way — the kind that wakes your mouth or nose up rather than sitting there quietly. It is used most for sour or salty-sharp things: lemon, vinegar, aged cheese, sea air. Usually singular with 'a' and often followed by 'of': a tang of lemon, the salty tang of the sea.
