Swaying describes a slow, smooth movement from side to side, like trees swaying in the wind, a boat swaying on the water, or people swaying gently to music. It's usually a soft, movement, not sudden or violent. 'Sway' is also used for influence — 'his speech swayed the voters' means it changed their opinion — but 'swaying' as a describing word is almost always about physical movement.
