Surpassing describes something so great that it goes beyond everything else — surpassing beauty, surpassing skill. It's a fairly formal, almost literary word, more common in writing than in everyday talk. It comes from the verb 'to surpass', which means to do better than, or go beyond, someone or something else — most will actually use 'surpass' far more than 'surpassing'.
