Stiffness is the feeling or quality of not moving or bending easily. Your body can have stiffness, like sore, tight muscles after exercise or a stiff neck when you wake up strangely. Objects can have stiffness too, like a door hinge that will not move smoothly. Stiffness can also describe how a person behaves - if someone seems cold, formal, and not relaxed with other people, you might say there is a stiffness in how they act.
