A shepherdess is a woman whose work is looking after sheep: walking with them, keeping them together, and keeping them safe. The general word is shepherd. Shepherdess is old-fashioned. You meet it in poems, fairy tales, and old paintings of the countryside more than on a modern farm, where people usually just say shepherd for anyone doing the job, or talk about a sheep farmer. The ending -ess was once a common way to mark 'this worker is a woman,' but many of those words feel dated now, and some people prefer not to use them.
