In clothes, separates are pieces such as skirts, shirts, and trousers that you buy and wear in different mixes, instead of one dress that is already a full outfit. Shops and fashion talk use this as a plural noun: “I’m looking for separates.” The idea is that each piece can stand on its own and still go with the others. This dictionary sense is mainly about women’s clothing, which is how older shop language used it; you will still hear it that way. It is not the verb separates as in “oil separates from water.”
