Sanctimoniousness is the noun for that quality: the state of behaving as if you are morally better than other people, in a way that them. Writers use it when they want a heavy, formal name for the attitude. Though actually, many careful speakers prefer the shorter noun sanctimony, which means the same thing and is easier in the mouth. You will meet sanctimoniousness in essays and reviews more than in speech. It names the quality, not a person (that is a sanctimonious person) and not a way of doing something (that is sanctimoniously).
