A samosa is a small fried parcel of food from India and nearby countries. Thin pastry is folded — often into a triangle — around a filling, then cooked in hot oil until the outside is crisp. Potato and pea is a common filling; spiced meat is another. You eat it as a snack or a starter, often with a sharp dipping sauce. It is savoury, not a sweet pastry, even when the shape looks a little like one. Though actually, the triangle is not a law: some kitchens make them fatter or more like a half-moon, and baked samosas exist for people who do not want the oil. English kept the food’s own name; we did not turn it into “Indian dumpling.”
