'Salad' entered English in the late 14th century from Old French salade, from Vulgar Latin salata, short for herba salata 'salted vegetables' — from salare 'to salt', from Latin sal 'salt'. The Roman dish was vegetables seasoned with brine, so the name points at the dressing, not at the lettuce.
