1. 1

Retsina is a Greek wine, usually white, that tastes of pine resin — the sticky juice of certain trees. Long ago, people in that part of the world sealed wine jars with pine resin to keep the air out. The taste stayed in the wine, and after enough years it was no longer an accident; it was the point. You either like it or you really do not. It is dry, not sweet, and the first sip can feel like walking into a pine forest. Though actually, it is not a grape name and not a tree drink with no grapes: it is grape wine wearing a pine coat. In Greece it often sits on the table with simple food, fish and oil and lemon. Outside Greece it is a curiosity; in Taiwan you may only meet it in a Greek restaurant or a serious wine shop.
