A popover is a light, almost empty little cake or muffin made from a thin mix of eggs, milk, and flour. You pour the mix into a very hot tin, and in the oven it puffs up high and pops over the top; the inside stays hollow. It is American. You eat it hot, with butter, jam, or with a roast dinner. Though actually it is very close to British Yorkshire pudding — same kind of batter, same puff — but people usually bake popovers in small cups, one by one, and often serve them as a bread, not only with beef. It is not a sweet shop muffin, and it is not the phrase pop over, which means come visit quickly.
