A ploughman was a man whose job was to guide a plough while a horse or ox pulled it. He kept the blade in the soil and the cut straight. Like ploughboy, this is old farm English; machines took the job away. You still meet the word in British life in one frozen phrase: a ploughman’s lunch — bread, cheese, pickle, salad — sold as the kind of meal a farm worker might once have eaten.
