A small nut with a shell that you crack with your fingers. Inside is a green kernel, a little sweet, a little , with a taste that is hard to mix up once you know it. People eat them from a bag, fold them into ice cream and cakes, or grind them into a paste for desserts. The pale green of the nut is also used as a colour name: pistachio green. You can buy them roasted and salted, or raw for cooking. Though actually, what we call a nut in the kitchen is the seed of the pistachio tree; the pretty shell is not the part you eat. They are not the same as pine nuts, peanuts, or green pumpkin seeds, even though all of those can look small and snacky in a bowl.
組成English took it from Italian pistacchio in the 1590s. That came from Latin pistācium, from Ancient Greek pistákion, from pistákē, the name of the tree. The Greek word itself is of Iranian origin. Older English also had pistace, from French. You can still hear the same old root in Persian peste, Arabic fustuq, and Turkish fıstık.
