A pimento is a small, mild red pepper — sweet rather than hot. The ones people know best are the little red strips stuffed inside green olives. Cooks also chop pimentos into cheese (pimento cheese is a southern US spread) or into salads, because they add colour and a gentle pepper taste without burning your mouth. The word sits next to Spanish pimiento, which can mean pepper more broadly, and English also uses the spelling pimiento for this same mild red pepper. Though actually, in Jamaica and some spice shops, pimento can mean allspice, the dried berry — a different plant altogether. So if a recipe says pimento, check whether it wants the mild red pepper or the spice. The meaning here is the mild red pepper.
