Pigheadedness is the stubborn quality itself — the determined refusal to change your mind, even when there are good reasons to do so. If pigheaded describes the person, pigheadedness names the thing they are showing. You can talk about someone's pigheadedness without calling them a name to their face, though it still sounds critical. Same informal, slightly blunt feel as pigheaded.
