If something is pick-and-mix, you may take the bits you want and leave the rest. The picture comes from British sweet shops: a wall of little boxes, and you pick a few of this, a few of that, mix them in one bag, and pay by weight. People still use it that way for sweets. Though actually, grown-ups now use it for almost any plan that is not one fixed package — a course, a holiday, a team, even a set of ideas. It feels informal and a bit British. Americans often say mix-and-match for clothes, which is a cousin, not the same game: mix-and-match is about things that go together; pick-and-mix is about freedom to choose. There is no one bundle you must swallow whole.
